Another look at the SATA toaster doesn't look so great. My approach to
reading reviews is to sort candidates from best rating to lowest, look
at the best rated devices and then read all the lowest ratings. The
toaster doesn't come out so well.

Still looking at RAID 5 solutions for the long term. Thanks for everyone's help.

The DIY solutions for RAID look expensive so far. Still Googling.
