I think the most popular Arduino, at least to start off with is the Uno, it is now at revision R3.  It may become a little underpowered for advanced projects, but it is the best place to start.  It has the proper form factor to be able to stack shields on top of it.

I was looking around the web and see that you can also build your own Arduino boards, even on a breadboard.
