Is the panel drilled?
Why not get a standard 10 or 20 turn pot, you know, one of those roughly one inch long blue ones, and either make a circuit board for them, or just put them on pert board? Yes, they would require a screwdriver to adjust, but maybe that is better anyway. Knobs get turned by people who shouldn't do it.
